Do you OCR a whole PDF?
No. The published tool reads one image (JPG, PNG or WEBP) per job. If you start from a PDF, convert the pages with PDF to JPG (/en/pdf-to-jpg) and then extract text with image to text (/en/image-to-text). It is not multi-page PDF OCR in one step.
Which languages does it recognize?
Spanish and English in the same engine. There is no language picker on the form.
